Ya tengo mandolina/I got a mandoline

Hoy hice lasagna de espinaca, ya saben, en plan light, y quedó tan bien que ni foto le tomé, ni rastros quedaron tampoco. Pues pasaba mi suegro y mi cuñada la menos vieja por aquí, y me trajeron un encargo que les hice de Laredo: mi mandolina

Por fin voy a tener mi estudiantina de gatos con capitas y panderos!

Bueno, no, ése sueño aún no lo puedo realizar, me refiero a una mandolina para cortar frutas, verduras y lo que se me ocurra en rebanaditas, rebanadotas, ondas, rejas, julianas y francesas

Así que, para apretarle a mi plan de deshacerme de los kilos navideños, ya podré preparar más rápidamente mis ensaladas, sopas, emparedados y pays Yujúu!

Cambiando de tema: hoy me tocó abrir los cantos especiales de la Iglesia Bautista de la Col.Martínez, y me llevé a mi chaparrusca, y mi chiquita se sentía muy mal, pero aún así, al terminar el primer himno (“Mañana”, de Ruth Ríos) había un reverente silencio en el templo y se oye una vocecita: “Mami, estuvo fantástico!!!!!!!!!” Cueraaaaa… por éso es bueno cargar con la porra para todos lados. Desafortunadamente momentos después empezó a ponerse muy malita, y ahorita ya pudimos controlarle la fiebre y está descansando

Today I made Spinach Whole wheat Lasagna, you know, the light version with cottage fat free and that stuff, and it was so delicious that I didn’t had time to take a picture, nor even got leftovers. And my father-in-law and my less older sister-in-low stopped by my house in their way to Mexico DF, and they brought me something I asked for: a mandoline

 

Finally I can form a band of cats, with little capes and taumborines!

 

Ok, no, that’s an impossible dream I use to dream, and now I’m talking about a mandoline slicer, to make straight slices, crinkle cuts, french fries and julienne strips out of veggies and fruits and other things like cheese and so on

 

So, now I can enhance my plan to get rid of the Christmas pounds, and prepare faster an infinitum amount of salads, soups, sandwiches and pies Yey!

 

And, changing the subject, Today I opened the evangelistic campaign at a Baptist Church in Monterrey, Mex, and I take my little daughter with me, but she was a little sick, but still she was quiet and happy with me, and after I finished to sing the first song, there was a reverent silence at the church, and then she shout: “Mom, that was Fantastic!” So stinkin’ cute!!! that’s why it’s good to take a fan with you wherever you go. Sadly, she got worse and worse, but now her fever is under control, and she’s sleeping and resting a bit

Sigo por el buen camino/Still on the good path

Han pasado varios días y he hecho muchas cosas: fui al cine el viernes con Marcela y Maye y con el kinder (8 niños en total), vimos “Marte necesita mamás” y les comento que la película está hecha para que las mamás vean un reflejo de su deprimente vida y se alegren con un final medio feliz Los niños pueden disfrutarla, supongo, los papás van a sentir que es una película para viejas, las solteras se van a dormir, pero las mamás la van a disfrutar.

Y pues siguiendo el buen camino, he preparado algunos platos ricos, sanos y ligeros, como éstos:

Como pueden ver, ahi hay una ensalada de lechugas con tomate, kiwi y col morada; quesadillas de nopal (con nopales en vez de tortillas), mini pastelillos de carne de pavo, y albóndigas de arroz y espinaca con queso parmesano, y un arrocito azafranado con camarones y chile de árbol. Y así, muchos sandwiches, hamburguesas y próximamente lasagna y todo bien ligero, porque la apuesta sigue en camino y aunque no llegue a ganar, tengo muchos motivos para perder ésos kilos malvados que subí desde el embarazo.

Luego les pongo más cosas, lo prometo, sólo que he andado muy ocupada y ni podía venir a contarles nada  

Bueno, éso fue el viernes, el sábado me lancé al mercadito y en unos 4 kilos más les posteo unas fotos que tienen que ver con lo que hice y compré allí; el domingo me tocó cantar en la iglesia, originalmente 2 canciones, pero la gripe no se me había quitado por completo, y para no arriesgarme a no llegar las notas y terminar de desgraciarme la garganta, sólo canté el Salmo 40, de Peregrinos y Extranjeros.

Y éste lunes me tocó ir a hacer despensa, fui a HEB, y compré un paquete de “Kim’s Magic Pops”, ya las había visto, incluso probado, pero fue hasta ahora que las estaban demostrando con guacamole que se prendió el foco, y preparé las mías al estilo tostada de la siberia, pero totalmente libres de grasa y como con 200 calorías menos

Así que pretendo hacer de ésta delicia mi caballo de batalla en lo subsecuente, dulce o salada, y les iré poniendo fotos e ideas, si es que no me las como antes, como pasó ayer.

Y me voy, hoy es martes de blockbuster Adiós!

It has been some days since my last entry, and I’ve been doing lots and lots of things: last friday I went to the movie theater with Marcela and Maye and all of our kids (a total of 8 kids), and we did watch “Mars need moms”, so I gotta confess that this one is a very good movie so the moms can be their lives reflected on the screen and see a mirror of a boring and sad reality, with a relatively happy ending. I suppose kids can enjoy it, too, and men can say it’s another chick flick, the single ones can fall sleep at the middle, but I’m pretty sure a mom may enjoy the plot.

And well, keeping the good way, I did make some tasty and light meals this week, like these ones:

The first picture is a green salad with purple cabbage, tomatoes and kiwifruit; then a grilled cactus with fresh cheese inside, quesadilla-like, turkey mini meatloaves and riceballs with spinach and parmesan cheese just grated, and the last one is a saffrony rice with shrimp and red hot chilli peppers Also, I made sandwiches, burgers and soon, lasagna and more favorites, but low-cal, low-fat, because the bet is still on, and although may be I cannot win, I have lots of reasons to drop the baby fat.

I want to publish more recipes, and I will, I promise, it’s just that I was so busy these days, I couldn’t write anything

Well, then, after going to the movies on the friday, I went to the flea market the saturday, I’ll tell you later what I bought and what I did, when I lose another 10 lbs may be; the sunday I should sing 2 songs at the church, but my throat was so closed, I just sang the Psalm 40 and that’s all.

This monday I went for shopping at HEB, and I found this thing called: “Kim’s Magic pops” they make right there, some kind of air-popped grains-fat free-vegan-snack that combines well with any kind of topper. I try one with guacamole, and instantly my bell rang : I made mines with avocado, shredded chicken breast, tomato and salsa, so light and low fat!

I already thought on so many combinations, sweet or salty, I’ll try to take pictures and publish’em, if I don’t eat them first, like happened yesterday

And today is tuesday of blockbuster , so, gotta go. Bye!

Un día veeerde >: ) /A greeeen day

Hoy celebramos San Patricio y si ustedes no saben de qué se trata, pues déjenme decirles que es lo que menos importa: hoy es día para vestirse de verde, tomar cerveza verde, mucho Bailey’s, y Cupcakes de Green velvet rellenos de Bailey’s

Así que hoy estuve muy ocupadita, como siempre pero más cansada, haciendo cupcakes de chocolate blanco que saben a pedacito de paraíso, rellenos de crema de menta, woooo Y, como dije antes, los green velvet rellenos de queso crema y bailey’s, muahahahaha

¿Cuál dieta, a ver, cuál? yo me hermano el día de hoy con todos los irlandeses, que no tengo idea de en qué parte del mapa estén, pero hoy es el día verde del año, y el que no lo celebre es un amarguetas

Y mañana tengo malas intenciones de perderme todo el día por ahí, y si todo sale bien, chance y hasta vaya al cine y si la película me late, se las recomendaré.

Today we celebrate St.Patrick’s Day, and if you don’t know what is it about, I gotta tell you that it doesn’t matter, the really important thing is that today we must wear green, drink green beer, lots of bailey’s and, obviously, eat green velvet cupcakes with bailey’s filling

So, today I was too busy, as usual but a bit tired making white chocolate cupcakes that taste like a little piece of heaven and filled with mint cream cheese, wooo and like I already told you, green velvet cupcakes filled and frosted with Bailey’s buttercream, muahahaha

Today I’m fellow of all my irish mates, although I don’t have a clue of where in the map Ireland is, but today is Green Day and just the sour ones are not celebrating it

Tomorrow I wanna rest and enjoy the whole day, may be I can go to the movies, may be not, but for now that’s all.
